Jerk Chicken

Ingredients

  • 10 chicken legs or thighs
  • 1/3 cup olive oil
  • 2 tbsp light brown sugar, packed
  • 1 tbsp dried thyme
  • 2 tsp ground allspice
  • 2 tsp smoked paprika
  • 1/4 - 1/2 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground cloves
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper

Instructions

  • preheat oven to 425 F or fire up grill
  • combine ingredients other than chicken in a large bowl
  • dry chicken, and poke holes in it
  • put chicken in bowl with spices and massage mixture into it and under skin
  • for oven: place chicken on rimmed, foil lined baking sheet. For grill, I use a skillet. Place chicken with space between and cook for 40 minutes or until browned.
  • serve hot with drippings! I like to serve it with Na’an and a fixings plate with chopped onions, lettuce, tomatos, and maybe some yoghurt.
